Still distilled with wormwood, anise, herbs (including fennel), and now with Madagascar vanilla pods and cocoa beans, this unusual green tipple is making a comeback. Absinthe was first formulated by a Frenchman, Dr. Pierre Ordinaire in 1792. 7 years later the formula was passed to Henry Louis Pernod of Pontarlier in France, who opened his first distillery (in Switzerland). By the 19th century many artists such as Monet, Degas, Picasso, painted or depicted ‘Absinthe’ and absinthe was seen as the ‘trendy’ drink, with absinthe spoons being almost as fashionable as Picasso himself.
