The Fedele range comprises some of the best value organic wines you will find. The Bianco is a blend of native Sicilian varieties, predominantly Catarratto. It is crisp and refreshing with pear and citrus flavours and attractive floral notes.
The grapes are vinified separately – the Cataratto on its own and the Inzolia and Grecanico together. After the fermentation of Cataratto is finished, the two wines are blended and kept on fine lees for two months until bottling.
