DV by Chateau Doisy Vedrennes
Château Doisy-Védrines, the largest of the Doisy estates and a 2éme Cru Classé Barsac property and has been owned by the Castéja family since 1946.
The crop is handpicked by successive selections (`tris`) as the workers pass through the vines, selecting only `botrytised grapes`. This is done three times. The wine ferments in barrels slowly until beginning of December and rests for a further year before being bottled. The finest barrels are reserved for the first wine but about 40% of production goes into the `second` wine DV. Thanks to the botrytis, this wine has developed aromas of exotic fruits, quinces and oranges.
