The colour of the Fino Heredad de Hidalgo is bright straw yellow, with slight greenish tones. Fine and elegant with a nose of nuts and wood nuanced by its aging in old american oak. The palate is full, fresh and balanced. Full-bodied and with a long, dry and persistent finish.

The white “albariza” soils on which the Palomino grapes grow in Balbiana and Miraflores are considered some of the best in the Jerez region. The Fino Heredad de Hidalgo is made from Palomino grapes grown in Hidalgo’s own vineyards where the harvest usually begins around the start of September, when the grapes reach perfect maturation. Using only the free run juice, with no pressing, the grapes then ferment using the vineyard’s own natural yeasts and while temperature controlled at all times. Once fermentation is complete, the musts are fortified with wine alcohol up to 15%. In American oak butts, the wine aged under the flor. The maturation of this wine is carried out with the traditional system of Criaderas and Solera, which allow the wines to acquire their excellent qualities. Finally thw wine is clarified and stabilized by treatment at low temperatures before filtering and bottling.
