Bright ruby in the glass, a unique blend of multiple vintages of Peppertree Vineyard Shiraz (often up to twenty years of age) that undergoes a secondary fermentation in bottle to provide the bubbles. This seductive wine is both fruity and earthy-mature, with spice and mulberry fruit flavours and a soft foamy effervescence leading to a lingering plummy richness. Very consistent in quality and flavour an excellent sparkling red to excite the palate. With 18 months on its lees, the final wine is slightly sweet due to the dosage of eight year old fortified Shiraz. First made in 1990, there are only 500 cases produced each year.
Drink with barbeque lamb, steak, or have with chocolate tart for dessert.
