Grape 100% Pinot Noir
Mid crimson. Spicy, just a touch meaty. Much the most savoury and dark-fruited of all François Ambroise’s wines, much more Nuits, unsurprisingly. Firm, savoury with good fruit depth for the medium term. Tannins are well handled. (Julia Harding MW 12.01.2016)

Domaine Bertrand Ambroise
Bertrand and son Francois have been working the domaine organically now for a number of years and the whole estate will be officially certified as such next year. This is one of the few domaines in the Cotes de Nuits to make splendid white as well as red wines. For the reds, Bertrand continues to believe in low yields, picking at full ripeness and de-stemming 100%. In 2009 maceration was extended to up to 28 days including eight day pre-fermentation cold soak, a technique which extracts the maximum of colour and fruit without excessive tannin. Whilst the percentage of new oak in the cellar remains high, most of the wines are now aged in larger 400 litre casks in order to privilege the maximum of fruit.
