Othello Napa Valley Red, Dominus Estate, Napa Valley, California 2012
A classic bordeaux blend of Cabernet- Sauvignon, Cabernet Franc and Petit Verdot matured in French oak.
Of a bright ruby red colour, Othello opens with intense yet precise aromas of red fruit (raspberry and blackcurrant) complemented by notes of black pepper an laurel. On the palate, the wine presents a good tannic density while maintaining a supple structure and a lovely aromatic persistence. Mineral notes continue to unfold over the long finish.
Othello 2012 is an ideal match for roasted meats (BBQ grilled steak, roast beef) braised short ribs, lamb, game (duck, pheasant, venison) and mushroom dishes.
Winemaker (Christian Moueix) notes:
Dry-farming (no irrigation)
Soil Tillage (French plow)
Manual harvest, sunny side of the vines picked a few days before the shady side. Manual and optical sorting. Gentle pump-overs and extraction.
Christian Moueix, of Château Pétrus fame, set up Dominus Estate in Napa Valley in 1981. Demand for the estate’s Grand Vin, Dominus, far exceeds production every year.
