Tsarev Brod Pet-Nat Extra Brut Riesling, Black Sea Coast, Bulgaria, 2020

Grape: 100% Riesling, initially at around 35g/l residual sugar, on completion of first fermentation (in bottle) by natural Methode Ancestral it drops to around 1-2g/l (bone dry) and the bubbles are formed.

Cloudy, with a bit of yeastiness and crusty bread on the nose along with citrus, apple, and mineral. On the palate, it’s bone dry with flavours of green apple, citrus, and a bit of seashell salinity and citrus on the finish. Fine and persistent mousse.

Food match: Aperitif, shellfish, salads, fish & chips.
