Your ‘house and pouring’ wines are the most important wines you will sell. These are the wines that you sell most of, the wines that customers will taste the most of, and the wines that they will share with their friends, family, colleagues and customers. They tell as much about you as your food.

A great wine list shows the passion for wine of the proprietor. But the truly great wine list offers value for the customer and shows wines that appeal not only by the glass as an aperitif but throughout the meal.
