Sparkling wine is a wine containing carbon dioxide to give it fizz. This comes from natural fermentation, either in a bottle, as with the méthode champenoise, in a tank designed to withstand high pressure, as in the Charmat process, or as a result of injection. The classic example of a sparkling wine is Champagne, exclusively produced in the Champagne region of France. Many sparkling wines are produced in other countries, such as Espumante in Portugal, Cava in Spain, Franciacorta, Trento, Oltrepò Pavese Metodo Classico, Prosecco and Asti in Italy (all known as Spumante) and Cap Classique in South Africa.
