Colomba Bianca has 1800ha of vineyards under organic production and Grillo, once a mainstay of Marsala production, is now often used to make a fresh, modern, dry white wine. Grillo is the flagship of the Sicilian indigenous white varieties and produces aromatic and floral wines with stone fruit and grapey flavours finishing on a refreshing lime and white pepper note.
