Grape: Chenin Blanc, certified organic, hand picked, 35 year old vines, yield 40hl/ha, fermented in 228L barrels with 12 months ageing.
Winemaker Xavier Weisskopf established his 17ha Montlouis domaine "Le Rocher des Violettes" in 2005. Located between the Loire & Cher rivers in the "Middle Loire", south of the much more well known Vouvray appellation, east of Tours, Montlouis also makes great wines from Chenin Blanc.
The “Touche Mitaine” cuvée comes from a 4-hectare parcel located on the slopes of Saint Martin le Beau. The terroir is 1.5m of clay/silex stones before hitting pure chalk. 75% of the wine is vinified in old oak and 25% in stainless steel.
Aroma: White flowers, gala apple, quince, flint, crushed stone, crushed shells, hint of fresh herbs.
Palate: Dry with flavours of yellow apple, lemon zest, crushed chalk, hints of salt and butter.
Pair with shellfish or a blanquette of veal.
