To have the honour of being called Champagne the wine must be made in Champagne from grapes grown in Champagne. The boundaries of Champagne are legally defined and split into five wine-producing districts. These five are: Aube, Côte des Blancs, Côte de Sézanne, Montagne de Reims, and Vallée Valléederne. Most Champagne houses are in the towns of Riems and Epernay. Champagne is made from one white grape - Chardonnay, and two black - Pinot Noir and Pinot Meunier.
